Grand Canyon Pioneer's Cookbook

ARIZONA'S FINE CHILI
Barry M. Goldwater
U.S. Senate, Arizona (retired)

1 pound coarse ground beef
1 pound dry pinto beans*
1 can tomato puree (6 oz.)
2 cups chopped onion
3 tablespoons chili powder
1 tablespoon cumin
Salt to taste
Water to desired consistency
SAUTE beef and drain off excess fat.
ADD onions, puree and beans.
MIX chili powder, salt and cumin; add to mixture. Bring to a boil, turn down heat and cook slowly until onions and beans are tender adding water to desired consistency. Serves 4 to 6 persons.

*Beans can be soaked overnight, or if added dry, chili must cook long enough for them to become tender.


Senator Barry Goldwater, a member of a pioneer Arizona family, is a noted photographer, author, ham radio operator, pilot, and river rat. He is on Otis "Dock" Marston's list of "First Hundred" who ran the Colorado River to the mouth of the Virgin River ( 1940).
